Following the successful opening of the Sixways Brasserie last weekend, we thought we’d introduce you to our Head Chef, Lawson Shuttleworth.
Lawson undertook his Classical Chef training at the Welcome Hotel in Stratford Upon Avon, which was linked with the Orient Express and owned by Royal Mail.
From here he progressed extensively in his career and travelled around the country working in an abundance of well-known Country House Hotels.
After years of travelling from place to place he settled down in Worcester and has been Head Chef in some of the finest local restaurants and pubs including The Elms Hotel in Abberley, the Crown & Sandys in Ombersley and Browns at The Quay in Worcester City Centre. Lawson has also previously held two rosettes. From this it is clear to see that he has a clear background in catering for fine-dining experiences.
Having originally only planned to work at the Stadium for a maximum of three years, Lawson has now been a part of the Sixways team for over thirteen years and has no plans to say goodbye any time soon.
With sustainability at the forefront of Sixways’ ethos, Lawson endeavours to use as much locally sourced produce as possible, and he has built outstanding relationships with an abundance of local suppliers. These locally produced goods will be used to produce only the finest dishes for our Brasserie.
Alongside the rest of us at Sixways, Lawson is excited for the launch of the Brasserie, and we can’t wait to welcome you all to the XV Club!
